Chocolate Chia Bars
Ingredients:
- 5 tablespoons butter, chopped
- ⅓ cup Anthony’s Coconut Sugar
- ¼ cup water
- 4 tablespoons Anthony’s Chia Seeds
- ⅓ cup Anthony’s Coconut Flour
- 1 teaspoon Anthony’s Psyllium Husk Powder
- ½ teaspoon vanilla extract
- ¼ cup finely chopped dark chocolate
Instructions:
- Preheat oven to 350° Fahrenheit.
- Grease a loaf pan.
- In a microwave-safe mixing bowl, cream together the butter and coconut sugar.
- Add in the water and chia seeds and mix well.
- Microwave for 30-60 seconds, or just until butter is melted.
- Stir together and let sit a few minutes.
- Add the coconut flour, psyllium husk powder, and vanilla; mix well and let sit a minute or two.
- Mix in chocolate and press dough into the prepared loaf pan.
- Bake for 20-25 minutes.
- Cool, cut, and enjoy.

Coconut Flour Chia Biscuits
Ingredients:
- 2 tablespoons Anthony’s Chia Seeds
- 4 tablespoons lukewarm water
- ½ cup cold butter, cubed
- ⅓ cup Anthony’s Coconut Flour
- 1 teaspoon Anthony’s Psyllium Husk Powder
- ¼ teaspoon salt
- 2 tablespoons coconut milk
Instructions:
- Preheat oven to 350° Fahrenheit.
- Grease a baking sheet.
- In a small bowl or coffee cup, mix together the chia seeds and water and let sit a few minutes, or until thickened.
- In a mixing bowl, cut together the butter, coconut flour, psyllium, and salt.
- Add in the chia gel and coconut milk and mix well.
- Form into 6 biscuits on the prepared baking sheet.
- Bake for 25-30 minutes.
- Cool and enjoy.

Low Carb Cheese Bread
Ingredients:
- 3 eggs
- ⅓ cup Anthony’s Organic Extra Virgin Coconut Oil, softened
- 1/2 cup plus 1 cup grated cheddar cheese, divided
- 2 tablespoons Anthony’s Psyllium Husk Powder
- 3 tablespoons Anthony’s Coconut Flour
- ¼ teaspoon salt
- ¼ teaspoon baking soda
Instructions:
- Preheat the oven to 350° F.
- Grease a glass loaf pan.
- In a mixing bowl, mix together the eggs, coconut oil, ½ cup cheese, and psyllium.
- Add the coconut flour, salt, and baking soda; mix well.
- Bake for about 25 minutes.
- Top with additional 1 cup cheese.
- Turn oven up to 425 degrees F.
- Bake for 10 minutes.
- Cool a bit, cut, and enjoy.
